Ingredients

  • 1 14 oz can of coconut milk
  • 1 C unsweetened almond milk
  • 3 Tbsp chia seeds
  • ¼ tsp vanilla extract
  • 8 Tbsp unsalted peanut butter
  • 2 C strawberries, diced

Directions

  1. in a large bowl with a lid, mix the coconut milk, almond milk, chia seeds and vanilla extract until well combined
  2. place in the refrigerator for 4-8 hours to allow the chia seeds to expand
  3. once the mixture has become thick like a pudding remove
  4. in a small jar, layer the pudding, 1 Tbs of peanut butter and ¼ C strawberries, & repeat until desired layering of parfait is reached
  5. Enjoy immediately or store in the fridge for a quick grab & go treat!
