Ingredients:

  • 1 large zucchini, chopped
  • 2 roma tomatoes, diced
  • 2 red bell peppers, chopped
  • 1 large cucumber, chopped
  • 1 C tabbouleh (optional)
  • 2 Tbsp rice vinegar
  • 2 Tbsp olive oil

Directions:

  1. Chop the veggies and place into a large mixing bowl
  2. Mix until well combined and add in the rice vinegar and olive oil until evenly distributed
  3. Tastes best if you refrigerate it overnight to let the flavors soak in!
