Ingredients:

  • 1 watermelon, cut and sliced into cubes (seeds removed)
  • 1 Tbsp fresh basil
  • 2 Tbsp fresh lime juice (about ½ lime)
  • 2 Tbsp honey
  • 1 Tbsp olive oil
  • optional: sprinkle of crumbled feta cheese

Directions:

  1. Slice the watermelon into cubes and place in a food processor or blender
  2. Add in basil, lime, and honey and puree until liquid and consistency of soup
  3. Pour the soup into a bowl and drizzle with olive oil and a sprinkle of feta cheese
